Gochujang chicken is a Korean-inspired dish made with gochujang.   • Soy sauce: Use light or all-purpose soy sauce, just not dark soy sauce. Dark soy sauce has a much stronger flavor and will make the sauce too dark.
  • Honey: For sweetness and a sticky, glossy finish.
  • Rice vinegar: For a touch of tang. You can also use apple cider vinegar.
  • Fresh garlic and ginger: For a flavorful base.
  • Toasted sesame oil: Be sure to use toasted sesame oil. It is brown in color and has a strong aroma. A little goes a long way.
  • Green onions: For freshness and some color.
  • Toasted sesame seeds: Add a little nuttiness and texture.

Instructions (Step-By-Step)

1. Prepare the sauce mixture

In a small bowl, whisk together gochujang, soy sauce, honey, rice vinegar, sesame oil, and water. Set aside. 

2. Coat the chicken

Place the chicken pieces in a bowl and season with salt and black pepper. Go easy on the salt, as the gochujang and soy sauce already contain salt.

Add the cornstarch and toss until the chicken is evenly coated. Shake off any excess and set aside. 

3. Cook the chicken

Heat the oil in a large pan over high heat. Add the chicken pieces in a single layer, working in batches if needed.

Cook for about 2 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

4. Make the Sauce

Add a little oil to the same pan over medium heat. Add the garlic and ginger and sauté for 30 seconds, until fragrant. Pour in the prepared sauce mixture and stir well. Let it simmer for a minute, until slightly thickened and glossy.

5. Toss everything together

Return the cooked chicken to the skillet. Toss well to coat every piece with the sauce.
