Bihari style aloo chokha: A super quick, spicy potato side dish from the Indian state of Bihar. A mashed potato relish flavored with onion, chilies, mustard oil, and coriander leaves. The same dish is popularly called Aloo makha in Bengal, and Alu chakata/chatuni in Odisha. However, the flavoring spices depend on the region and personal preference.
Bihari chokha is a mix of roasted potato, roasted eggplant, or roasted tomato with spices. It can be made with each one separately or by combining any two or all three of them together. Traditionally chokha is served with Liti(a popular Bihari dish).
Preparing aloo chokha is easy. The potatoes can be fire-roasted, baked, boiled, or steamed. If you have some leftover potatoes, you can use that as well. I have used boiled potatoes here. But fire-roasted or baked potato gives the best taste.
I do add a roasted tomato for the slight tang. You can skip if you want. Also, I like to roast the garlic clove. Similar to tomato chokha. You can use plain garlic as well. Adjust chilies as per your resistance. Discard the seeds and membrane if you are not much into spice.
Serve this Bihari style aloo chokha with Liti. You can also have this with steamed rice and dal for a filling meal or use it as a spread over bread and crackers or just make sandwiches and wraps.

Ingredients
- 3 medium potatoes boiled and peeled
- 1 medium tomato roasted and peeled
- 1 garlic clove roasted and grated
- ¼ large onion finely chopped
- 1 green chili finely chopped or as needed
- 4 sprigs fresh coriander leaves finely chopped
- 1 teaspoon mustard oil
- ½ teaspoon red chili flakes or chili powder
- Salt as needed
- ½ teaspoon lime juice
