    Lassi is the most loved traditional Indian beverage prepared by blending yogurt, sugar, and spices. 

    Indians' love for lassi is beyond words and I am no exception. I make lassi quite often. Especially plain sweet lassi and mango lassi. Sometimes I also make masala chaas, the savory yogurt drink. 

    This mango lassi recipe with mango pulp can be consumed as a refreshing drink or after-meal dessert. Even it can be served as breakfast.

    Mango lassi is the most popular fruit version of lassis. The secret of a perfect mango lassi depends on the consistency of the curd and sweetness of the mango. You just need a few simple ingredients and you are good to go. Now without doing further ado let's discuss the ingredients.

    Ingredients You'll Need

    • Mango: Always use fresh, sweet, fiberless mangoes. If fresh mango is not available, you can use frozen or canned mango.
    • Yogurt: Use perfectly set, plain, fresh curd/yogurt for the best result. You can even use greek yogurt. Traditionally whole milk yogurt is used to make lassi. However low-fat yogurt could be used too. To make a vegan mango lassi use dairy-free plant-based milk yogurt. 
    • Milk: Milk (or water) is used to thin out the lassi. I prefer milk as it balances the flavor, and adds a creamy base to it (a must for a good lassi). You can use whole or low-fat dairy milk. Use vegan milk to make it vegan friendly.
    • Sweetener: Traditionally lassi is made with sugar. However, sugar could be replaced with honey, maple syrup, agave, or stevia. You can even prepare this mango lassi without adding any extra sweetener by reducing the proportion of yogurt to mango pulp. 
    • Flavor: Optionally a pinch of freshly crushed cardamom could be added to enhance the flavor. As cardamom goes wonderfully with mango.

    • Put mango and sugar together in a blender and blend until the mixture combines.
    • Add yogurt, milk, and crushed cardamom. Blend again until the mixture turns smooth.

    Ingredients

    • 1 cup peeled & roughly chopped ripe, sweet mangoes or 2 medium-sized mangoes
    • ¾ cup fresh, thick whole-milk yogurt/curd (chilled)
    • ½ cup milk (chilled)
    • 2 tablespoon sugar or to taste
    • A pinch of freshly crushed cardamom optional

    Instructions

    • Put mango and sugar together in a blender and blend until the mixture combines.
    • Add yogurt, milk, and crushed cardamom if adding. Blend again until the mixture turns smooth. or you can blend all the ingredients together.
    • Pour the lassi in the serving glasses, garnish with your choice of dry fruits or chopped mangoes, and serve immediately.

    Notes

    • Make sure the curd you are using is thick and fresh.
    • Always use ripe, sweet, fiberless mangoes.
    • Use full-fat curd to get the real mango lassi taste.
    • The consistency of the lassi shouldn't be too thick or thin and the taste of the lassi is neither too sweet nor tang.
    • I don't use ice cubes in this lassi instead use chilled curd and chilled milk. Feel free to add ice cubes if you like.
