Whether you need a quick fix ramen hack or just want to prepare a delicious bowl of spicy noodles in no time - you have found the right recipe! These noodles come together super fast!
This recipe is what I make at home when I like to enjoy spicy noodles. It uses simple ingredients , vegan, and does not require a ton of ingredients. In essence, just ramen noodles are tossed in a spicy, savory sauce but don't worry, it is not fiery hot. However, you can customize the heat factor to your own tastes. You can also use any vegetables and proteins you prefer.
Ingredients You'll Need
Here are a few important notes about the ingredients. For measurements see the recipe card below.
Dry instant ramen noodles: Those inexpensive packets of dried instant noodles. Just discard the seasoning packet that comes with them. Any flavor is fine, as the noodles inside are all the same;
Fresh garlic and white parts of green onion: These are the two aromatics I use. The flavor of fresh aromatics truly shines;
Sesame oil: for stir-frying ramen noodles;
Soy sauce: for that umami flavor. I used low sodium soy sauce;
Brown sugar: just a touch of sweetness to amp up the flavor;
Red chili flakes: bring the heat factor to the sauce. For an extra kick, feel free to double or triple the amount of chili flakes. (See more options in the recipe notes)
Green onions: use fresh green onions as a garnish and a pop of some refreshing flavor;
Possible Variations
- Use different noodles: you can swap ramen noodles with your favorite instant noodles. If instant noodles are not your thing, feel free to use whatever kind of noodles you prefer.
- Make it gluten-free: use gluten-free noodles like soba or rice noodles. Also, use tamari instead of soy sauce to make this recipe gluten-free.
- I use sesame oil. Vegetable, sunflower, canola, peanut, or grapeseed oil will work too.
- No chili flakes? Substitute it with chili powder or red chili paste. For a more intense flavor Asian red chili sauce, sambal, sriracha, or gochujang (sweet, fermented Korean chili paste) can also be used. The flavor overall will slightly change, though.
- Add in proteins: feel free to add some stir-fried or baked chicken, shrimp, or tofu to your noodles.
- Add in veggies: stir-fry veggies like asparagus, bell peppers, broccoli, carrots, green beans, mushrooms, and peas would work well with these ramen noodles.
Preparations Step By Step
- Heat water in a pan or pot and bring the water to boiling hot.
- Add ramen noodles and cook until al dente (tender). Be sure to remove the seasoning packet that comes with it.
- Reserve ¼ cup of cooking noodles water to add to the sauce later. Then drain the noodles.
- Whisk together soy sauce and brown sugar in a bowl. Then set aside.
- Heat sesame oil in a pan. Add onion and garlic and saute for a minute.
- Add chili flakes and stir to mix.
- Add the sauce mix and noodles water. Then stir.
- Add the ramen noodles and toss gently.
- Garnish with spring onion greens and serve hot.
Serving Suggestions
You can serve these spicy ramen noodles with stir-fries, soups, salads, or any grilled/baked protein (like chicken, shrimp, or tofu). I love serving this with my Asian broccoli stir fry and a glass of peanut butter milkshake.
You can even customize this 10 minute spicy ramen with toppings like soft boiled egg, poached egg, or nori seaweed to enhance the taste further.

Storing and Freezing Spicy Ramen Noodles
Leftover spicy ramen noodles can be stored in an airtight container and kept in the refrigerator for up to 3 days. When reheating, you can add a splash of water or broth to loosen the noodles and restore moisture if needed. It's best to reheat them on the stove over medium heat, but a quick zap in the microwave will work in a pinch.
As for freezing, it's not recommended to freeze cooked ramen noodles. The texture of the noodles can become quite mushy when defrosted and reheated. If you anticipate having leftovers and want to freeze them, it's best to separate the portion of sauce and freeze that instead. You can then cook fresh noodles and combine with the defrosted sauce when you're ready to enjoy your meal.
Frequently Asked Questions
The delightful heat in this recipe comes from the vibrant red chili flakes, which add a touch of spiciness and depth of flavor. To tailor the spice level according to your preference, you can easily adjust by reducing the amount of chili flakes or even omitting them entirely. By doing so, you'll still be able to enjoy the delicious flavors of this dish without the fiery kick. If you want to go the other way and make it spicier, try adding a little sriracha sauce or a small amount of hot chili oil. Just add it gradually as these ingredients quickly take the dish to the next level of heat!
Yes, absolutely! You can save time by preparing the delicious sauce and fresh vegetables in advance. Simply chop the veggies, sauté them to perfection, and let them cool. Then, store them in the refrigerator until you're ready to enjoy your meal. When the time comes, all you need to do is cook the noodles to al dente perfection, gently heat up the flavorful sauce, combine everything together, and voila! A scrumptious dish ready to be savored.
Yes, you have the freedom to choose any type of noodle that suits your taste and preference. From classic spaghetti to hearty penne, the options are endless. However, it's important to keep in mind that different noodle types may require varying cooking times due to their thickness and texture. So, be sure to follow the instructions on the package or experiment a bit to achieve the perfect al dente texture that you desire. You can even try making your own homemade ramen if you are feeling adventurous!
While fresh garlic and onions will give the best flavor, you can use powdered in a pinch. Use ⅛ teaspoon of garlic powder for each clove of fresh garlic, and about ⅓ teaspoon of onion powder for each green onion.
Yes, you can substitute with honey, maple syrup, or even white sugar. However, it's important to note that each of these alternatives may impart a slightly different flavor profile to your dish. Honey adds a subtle sweetness with floral undertones, maple syrup brings a rich and earthy sweetness, while white sugar provides a straightforward sweetness. Consider experimenting with each option to find the perfect substitute that complements your recipe and taste preferences.
If you want more of a soup style of dish, you can use some chicken broth or vegetable broth or even ramen broth to the cooked noodles. You may also want to add some vegetables to bulk it out. The ones mentioned above work well along with things like bok choy.

Thanks for this. Not that I followed the recipe, but it reminded me of the way I used to make noodles and hadn't done for several years.
I added a julienned carrot, sliced mushrooms, an egg and a tablespoon or two of diced tomatoes.
Next time it will be something different. It all depends on what I have in my fridge.
